The Recipe: Chaga Beauty Muffins

Ingredients:

⋒ 1 cup spelt flour (or any preferred whole grain flour)

⋒ 1/2 cup shredded coconut

⋒ 1/2 cup coconut sugar

⋒ 1 tsp baking powder

⋒ 1/4 tsp salt

⋒ 1/2 cup melted coconut oil (or another oil)

⋒ 2 flaxseed eggs* (or 2 large eggs)

⋒ 2-3 tsp Shyft’s Chaga mushroom powder

⋒ 1/4 cup carob flour (optional, for added richness)

⋒ 1/2 cup almond milk (or milk of choice)

Chaga Muffin - delicious & healthy!

Instructions:

1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

2. In a large bowl, combine the dry ingredients: spelt flour, shredded coconut, coconut sugar, baking powder, salt, and carob flour (if using).

3. In another bowl, whisk together the wet ingredients: melted coconut oil (or another oil), flaxseed eggs, vanilla extract, and almond milk.

4. Slowly add the wet ingredients to the dry ingredients, mixing until just combined.

5. Stir in the Chaga mushroom powder until well incorporated.

6. Spoon the batter into the muffin tin, filling each cup about 3/4 full.

7. Bake for 18-20 minutes, or until a toothpick inserted into the center of the muffins comes out clean.

8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
